There is something particularly satisfying about a large Kiritsuke.
Long, precise and unmistakably Japanese, this one has become a favourite of ours.
Hand forged in Japan from Aogami Super, this is a substantial 240mm blade with a strong, purposeful profile. The long straight spine, pronounced Kiritsuke tip and generous blade height give it an unmistakable presence without losing the precision that makes the profile so appealing.
The forging and finish are a big part of its character. The dark, textured blade carries the marks and variation of the forging, giving it a depth that a highly polished finish simply can’t replicate.
The handle is equally striking — dark timber paired with a beautiful natural horn bolster. Simple, understated and very well suited to the character of the blade.
Then there is the steel.
Aogami Super — one of our favourite carbon steels.
It takes an exceptionally keen edge, holds that edge extremely well and gives the kind of feedback under the hand that makes carbon steel so addictive to work with.
This is a knife that can comfortably move between fine vegetable work, slicing and general prep, but what really appeals to us is the knife itself.
