Our Philosophy
Chef Sharp Knife Collective (CSKC) is a boutique Japanese knife atelier built on authenticity, craftsmanship and trust. Founded by chefs with over 25 years of combined experience, CSKC exists to connect people with exceptional Japanese kitchen knives that have been personally sourced, professionally prepared, and thoughtfully presented.
This is not a volume-based knife store. Every knife is selected because it deserves a place in the collection — not because it fills inventory.
The business exists to celebrate the makers, the steels, and the traditions behind Japanese cutlery.
Every Knife Earns Its Place
We don't believe a knife earns its place simply because it carries a famous name or an expensive price tag. CSKC exists on the other side of that line — every knife we carry earns its place. No duds.
Every knife in our collection is selected against four guiding principles that reflect the values of Japanese craftsmanship and our own experience using, handling and sourcing knives directly from Japan. A knife qualifies as a rare find if it meets any one of the following four pillars — not necessarily all four.
Hagane — The Steel
Performance begins with the material.
Steel is the heart of every knife. These knives have been selected based on their purity and rare materials.
Takumi — The Maker
Mastery cannot be rushed.
Behind every exceptional knife is a maker whose knowledge spans generations. Not all makers follow the rules, ‘Takumi’ exists to highlight their legacy.
Tan — The Forge
Where craftsmanship meets steel.
Forging and heat treatment define balance and edge stability. Forging quirks, imperfections, hybrid blades. ‘Tan’ covers and embraces the curious minds driving innovative and sometimes ‘unusual’ results

Chosen from the heart.

The kitchen shaped who I am.
Years spent in professional kitchens, including Michelin-starred restaurants, taught me that in Japanese cuisine, a knife is more than a tool—it is an extension of the chef.
Working with world-class seafood demanded absolute precision. Every cut carried responsibility. Every movement mattered. There is nowhere to hide when preparing ingredients that will be served exactly as they are.
My career has taken me through intimate eight-seat restaurants, where each guest watches every slice from across the counter. Under the guidance of third-generation sushi master chefs with decades of experience, I learned that exceptional knives are not collected for prestige—they are chosen because they earn their place through flawless performance.
That philosophy never left me.
Today, I travel throughout Japan searching for knives with the same standards I learned in the kitchen. I visit specialist retailers, respected makers and traditional workshops, selecting blades that represent genuine craftsmanship, proven performance and authentic provenance.
I'm searching for what deserves to be used.

For more than 15 years — including time in Michelin-starred, Chef Hat, and AA Rosette-awarded restaurants — I've relied on exceptional knives every single day. Long before I became a collector, I was simply a chef searching for tools that could withstand the demands of professional service.
Nikkugami is my obsession with the tools that make it all possible.
I'm not a retailer, or a salesman. I'm a curator with kitchen-scarred hands. Every knife I choose has to satisfy two standards: the beauty of Japanese craftsmanship and the practical reality of life on the board.
Together with Deibugami in Japan, I spend countless hours sourcing exceptional blades from respected makers and specialist knife shops. Every knife carries its own story. Our role is simply to recognise the ones worth telling.
I still live and breathe this industry. I might sharpen your knife. I might cook you a serious meal. But above all, I'll help you find a knife you'll reach for every day.
