Yoshida Hamono 180mm ZDP-189 Honyaki Deba

A Deba is traditionally a heavy Japanese fish knife, built to deal with heads, frames and bones. Traditionally, that means a softer, tougher steel that can tolerate the punishment.
So naturally, Yoshida Hamono decided to make one out of solid ZDP-189.
Because apparently a normal Deba wasn’t excessive enough.
At approximately 480g, this thing is nearly half a kilogram of Japanese knife. It is thick, brutally substantial and completely unapologetic in the hand.
And then there’s the steel.
ZDP-189 is an exceptionally hard powder-metallurgy steel, renowned for extreme wear resistance and extraordinary edge retention. It is not the obvious choice for a knife whose job description involves fish bones.
Which is precisely why this knife is so ridiculous.
Solid ZDP-189. Honyaki.
This isn’t a ZDP-189 cutting core laminated between softer steels.
The blade is made from a single steel throughout.
That makes this a genuine ZDP-189 Honyaki Deba — a remarkably unusual combination of traditional Japanese geometry and an aggressively modern high-performance steel.
The result is something that feels almost deliberately over-engineered.
A traditional fish knife.
In one of Japan’s hardest, most wear-resistant steels.
With enough mass to make its presence immediately obvious.
It’s a Deba that absolutely did not need to exist.
And yet, here it is.
For the collector who looks at a perfectly sensible knife and thinks, “Yes, but what if we made it completely unreasonable?”
For the purist who appreciates things that exist at the extreme end of their category.
For the obsessive who doesn’t particularly care whether something is necessary — only whether it is interesting.
This is a serious working knife, but make no mistake:
This is also an outrageous flex.
